Typically ranging between 1/2 and 1 pound, with some even larger, these Alaskan halibut sweethearts are made from two fillets placed back-to-back, serving 2 equally-sized portions. This type of processing allows for uniform thickness like a halibut steak. When thawed, the two halves will come apart.
 
The name 'sweetheart' was given because the shape of the cut resembles a heart.
 
Our halibut comes from the Gulf of Alaska and Cook Inlet.
