ALASKA SNOW CRAB AND CHICKEN TERIYAKI
Place chicken in glass pan. Cover with ¾ cup Teriyaki Marinade. Set aside ½ cup Teriyaki Marinade for dipping sauce. This should not touch raw chicken. Cover chicken with plastic and refrigerate 4-8 hours. Place chicken on broiling pan and broil 5-6 inches from heat for 15-20 minutes. Turn chicken while broiling and brush with another ¼ cup Teriyaki Marinade. Meanwhile, brush Alaska Snow Crab with oil and broil 5-6 inches from heat for 5 minutes. Serve chicken and crab with reserved ½ cup Teriyaki Marinade for dipping. Makes 4 servings.
Teriyaki Marinade: Whisk together ¾ cup peanut oil, 6 tbsp. soy sauce, 6 Tbsp. sherry, 3 tbsp. brown sugar, 1 tbsp. grated ginger, 2 tsp. Orange zest and 1 ½ tsp. minced garlic.
Orange-Ginger sauce: Whisk together ¾ cup orange juice, 1 tbsp. light soy sauce, 2 tsp. cornstarch, 1 clove pressed garlic, ½ tsp. grated ginger and ½ tsp. crushed red pepper flakes.
