Cut cod into serving sized pieces. Coat on all sides in about 3 tablespoons melted butter. Place in baking dish. Combine bread crumbs, parsley, seasonings and 1 tablespoon melted butter. Sprinkle crumb mixture over cod. Bake at 450°F. 8 to 10 minutes or until cod flakes easily when tested with a fork. Serve with lemon wedges. Makes about 4 servings. Recipe may be halved.
Microwave Method
Cut cod into serving sized pieces. Coat on all sides in about 3 tablespoons
melted butter. Place in microwave proof dish. Combine bread crumbs, parsley, seasonings
and 1 tablespoon melted butter. Sprinkle crumb mixture over cod Cover with plastic wrap;
microwave at medium 3 minutes. Rotate dish 1/4 turn; microwave at medium 2 to 4 minutes
longer or until cod flakes easily when tested with a fork. Serve with lemon wedges. Makes
about 4 servings.
